Simon What you see now is what we served on the opening night of the Quill and Tassel. Yes, it was sensational. But something was missing. You have to be utterly honest at a time like that. Honest with yourself, your staff and your audience. And, above all, honest with your food. I couldn't look at those marvellous currants. I knew I'd let them down.

At lunchtime, I scattered a palmful of closely-shaved fennel on our Bread AND Butter Pudding.
