Pasta Pasta and tuna has become the basic fare for many university students, but I have rescued it from these dire hovels of poverty and transformed it into a treat for the eye and the palate.

Homemade pasta may take a little more effort than opening a packet but your tastebuds deserve the experience. When searching for inspiration for this dish I thought Italian, I thought colour, I thought of the colours of the Italian flag, rich red, sharp green and natural white.

Pasta is simply eggs and flour, therefore the flour is important. It should be strong, it should be white, it should be Italian. A holiday in Italy to find a good flour mill is well worth the effort. Once discovered a simple e-mail can ensure you have fresh flour within twenty-four hours.
