Simon What's the secret of a great bread and butter pudding? The bread? The butter? The pudding?
No. It's all in the 'and'. That's why we call this dish Bread AND Butter Pudding.
We created it in the late twentieth century for the opening of our restaurant, The Quill and Tassel at Bray. Was it Nigel Havers who christened it 'the dessert of the nineties'? Possibly. So many people claim that honour, we can't tell the myth from the truth. Perhaps it was Stephen Fry, who dined with us first in 1997 and will return when his filming commitments allow. 'The dessert of the nineties' - it certainly has the style and wit we associate with my man Steve!
