You will require:- 275g organic plain flour - the flourmill at Lower Slaughter produces excellent stone ground flour 1 level spoonful bicarbonate of soda 2 level teaspoonfuls baking powder 1 level teaspoon salt 175g soft, light, brown sugar 50g shelled and chopped walnuts 3 free range, organic eggs it is, of course, better to purchase from a local farm where you can study the hens and ensure they are living as stress-free a life as possible. A happy egg makes all the difference to the flavour of a cake. 2 ripe bananas, peeled bananas are often sold under ripe, ensure yours arent too hard, nor overripe and squishy. 175g finely, grated Johns Purple carrots 6 fl oz oil olive oil is too heavy for cake making and you should use a light vegetable oil. I prefer sunflower as they have such happy looking faces.
