Greim Gasta - Olive Oil Cake

Olive Oil Cake

Ingredients

180g flour
2 teaspoons yeast or baking powder
Pinch salt
225g sugar
3 eggs
Zest of 1 lemon
60ml milk
180ml extra-virgin olive oil
100g toasted chopped flaked almonds
Blackberries, blueberries, raspberries
Honey

Method

Heat the oven to 180 degrees and butter and flour a cake tin. Mix together the flour, baking powder and salt.
Using an electric whisk, beat the sugar & eggs together in a large bowl until the mixture becomes pale. Now add the flour mixture to the egg mix and stir it in slowly. Add the lemon zest & stir in. Add the milk followed by the olive oil. Mix well.
Finally add the toasted chopped almonds and transfer this dough to the cake tin or mould. Place in the oven at 180/190 degrees for at least 40 minutes. Test by sticking a knife in - it should come out dry.
Turn out the cake. Serve with fromage blanc topped with blackberries, blueberries & raspberries. Pour a little honey over the berries.
