Greim Gasta - Clafoutis

Éamonn Ó Catháin shows how to cook Clafoutis, a dessert which is making a comeback.

Clafoutis aux Myrtilles (Calfoutis with Blueberries)

Ingredients

250ml milk
80g flour
125g sugar
1 pinch sea salt
5 eggs
Vanilla essence or 25g vanilla sugar
60g butter in chilled cubes
500g blueberries

Method

Begin by making the mix for the Clafoutis which is essentially the same as a crepe batter. Warm the milk & butter in a saucepan.
Put 3 eggs, 2 egg yolks & 125g sugar in a bowl and whisk together.
Pour in the hot milk & butter. Mix well. Add the vanilla essence & a pinch of sea salt.
Sieve in the flour and mix slowly and well. Grate in a little lemon zest.
Meanwhile make a sugar syrup for the blueberries by heating water & sugar in a saucepan. Put the blueberries in the syrup when ready.
Butter and flour the bottom and sides of a cake tin and arrange blueberry mixture on the bottom. Then pour the clafoutis mix on top and bake in a preheated oven for 30-40 minutes at 180 degrees.
