Crispy spiced butter beans on whipped feta

We don't need to sell you on the health benefits of this spiced bean and whipped feta situation (fibre and protein, btw) because it tastes that good. Easy enough for midweek, but with weekend attitude.

Each serving (4 portions) provides 343 kcal, 17.6g protein, 20.3g carbohydrate (of which 6.9g sugars), 19.4g fat (of which 10.8g saturates), 8.5g fibre and 1.34g salt.

For the whipped feta

For the hot honey

To serve

  • small handful fresh dill, roughly chopped, to garnish
  • ⁠2 flatbreads, toasted

Method

  1. To make the butter beans, preheat the air fryer to 200C or preheat the oven to 240C/220C Fan/Gas 8½. If using the oven, line a baking tray with baking paper.

  2. ⁠Place the butter beans, olive oil, smoked paprika, cumin and garlic granules in a large bowl. Season with a generous pinch of salt and pepper. Toss well to coat.

  3. Spread the butter beans out in a single layer in the air-fryer basket or on the baking tray. Air-fry for 15–20 minutes, shaking halfway through, or roast for 30–35 minutes, turning halfway, until golden and crisp. The beans will continue to crisp as they cool.

  4. ⁠Meanwhile, make the whipped feta. Add the feta, yoghurt, lemon juice, honey and garlic to a blender or food processor and season with a good crack of pepper. Blend until smooth and creamy. If needed, loosen with the olive oil.

  5. ⁠To make the hot honey, stir the chilli oil and honey together in a small bowl. Microwave for 10 seconds until warm and runny.

  6. ⁠To serve, spread the whipped feta onto a platter or shallow bowl and spoon over the crispy butter beans.

  7. Finish with the hot honey and garnish with the dill. Serve with the warm flatbreads alongside for scooping everything up.
