Recipe tips

There are a few types of paprika available in supermarkets and it's important to use the smoky variety as that's what gives the sauce it's smoky barbecue flavour.
You can use this barbecue sauce as a marinade, but it's best to thin it with a few tablespoons of cold water and use it on things that cook fairly quickly (the high sugar content means barbecue sauce burns easily – a little charring adds to the barbecue flavour but you don't want too much).
Homemade barbecue sauce can be made ahead and kept in the fridge for up to a week.
